Ingredients:

50g sweet potato starch noodles
1 tablespoon soy sauce
1 tablespoon mirin (sweet cooking rice wine)
1 teaspoon sugar
2 tablespoons dashi stock (Japanese fish stock) or water

Cooking Instructions:

Bring a pot of water to a boil. Add the sweet potato starch noodles and cook for 8-10 minutes until tender. Drain the noodles and rinse with cold water. Set aside.
In a small bowl, mix together the soy sauce, mirin, sugar and dashi stock or water until combined.
Place the cooked noodles in a bowl and pour the sauce over them. Toss to combine.
Serve warm or chilled as desired.
