Ingredients:

2 medium potatoes (400g)
1/2 onion (50g)
1/4 cup of all
purpose flour (30g)
2 tablespoons of butter (30g)
1 egg (50g)
Salt and pepper to taste

Cooking Instructions:

Peel and dice the potatoes into small cubes. Place them in a pot and cover with cold water. Bring to a boil over medium heat and cook for 10 minutes or until the potatoes are tender. Drain and set aside.
Finely chop the onion and sauté in butter over medium heat until softened. Add the cooked potatoes to the pan and mash together with the onions until smooth. Season with salt and pepper to taste.
In a separate bowl, beat the egg lightly then add it to the potato mixture along with the flour. Mix everything together until combined then shape into small patties about 2 inches in diameter.
Heat some oil in a frying pan over medium heat then add the patties one at a time and fry for about 5 minutes on each side or until golden brown and crispy on both sides. Serve hot with your favorite dipping sauce!
