Ingredients:

2 tablespoons vegetable oil
1/2 cup diced onion
1/2 cup diced carrot
1/2 cup diced sweet potato
1/4 cup diced bell pepper
2 tablespoons minced garlic
2 tablespoons minced ginger root
1/4 cup cooked shrimp, chopped
1/4 cup cooked squid, chopped
2 tablespoons soy sauce
2 tablespoons mirin
2 tablespoons sake
1/2 teaspoon sugar
1/2 teaspoon salt
3/4 cup all
purpose flour
3/4 cup cold water
Oil for deep
frying

Cooking Instructions:

Heat the vegetable oil in a large skillet over medium heat. Add the onion, carrot, sweet potato, bell pepper, garlic and ginger and cook until softened. Add the shrimp and squid and cook for another minute.
Add the soy sauce, mirin, sake, sugar and salt to the skillet and stir to combine. Cook for another minute or two until everything is heated through. Remove from heat and set aside.
In a medium bowl whisk together the flour and cold water until smooth. Add the vegetable mixture to the bowl and mix until everything is evenly combined.
Heat enough oil in a deep pot or deep fryer to 350°F (175°C). Drop spoonfuls of the batter into the hot oil and fry until golden brown on both sides (about 3-5 minutes). Remove from oil with a slotted spoon or spider strainer and drain on paper towels before serving.
