Ingredients:

200g shrimp (peeled and deveined)
2 tablespoons olive oil
1 onion (diced)
2 cloves garlic (minced)
1 teaspoon ginger (grated)
1 teaspoon chili powder
1 teaspoon cumin powder
1 teaspoon paprika powder
2 tablespoons tomato paste
2 tablespoons honey
400ml can of diced tomatoes
200ml vegetable stock
Salt and pepper to taste
Chopped fresh parsley for garnish (optional)

Cooking Instructions:

Heat the olive oil in a large saucepan over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
Add the ginger, chili powder, cumin powder, paprika powder, tomato paste, honey, diced tomatoes and vegetable stock. Bring to a boil then reduce heat to low and simmer for 15 minutes.
Add the shrimp to the saucepan and cook until they are pink and cooked through, about 5 minutes. Season with salt and pepper to taste.
Serve the chili with chopped fresh parsley as garnish if desired. Enjoy!
