Ingredients:

2 cups cooked white rice
1/2 cup cooked salmon or tuna
1/4 cup diced carrots
1/4 cup diced cucumber
1/4 cup diced shiitake mushrooms
2 tablespoons soy sauce
2 tablespoons mirin (sweet cooking sake)

Cooking Instructions:

In a medium bowl, combine the cooked white rice with the cooked salmon or tuna. Mix together until evenly combined.
Add the diced carrots, cucumber and shiitake mushrooms to the bowl and mix together until evenly combined.
In a small bowl, combine the soy sauce and mirin together until evenly mixed. Pour this mixture over the rice mixture in the medium bowl and mix together until evenly combined.
Place the chirashizushi in a shallow dish or plate and serve immediately. Enjoy!
