Ingredients:

1 cup cooked white rice
2 tablespoons soy sauce
2 tablespoons mirin (sweet cooking sake)
1 teaspoon sugar
2 tablespoons sesame oil
2 eggs, beaten lightly
4 ounces boneless chicken thigh or breast, cut into small cubes
4 ounces shiitake mushrooms, sliced

Cooking Instructions:

In a medium bowl, combine the soy sauce, mirin and sugar and mix until the sugar is dissolved. Set aside.
Heat the sesame oil in a large skillet over medium heat. Add the chicken and cook for 3-4 minutes until lightly browned. Add the mushrooms and cook for an additional 3-4 minutes until softened.
Pour in the soy sauce mixture and bring to a boil. Reduce heat to low and simmer for 5 minutes until the sauce has thickened slightly.
Add the beaten eggs to the skillet and stir gently to combine with the other ingredients. Cook for 1 minute until just set but still slightly runny.
Serve over cooked white rice and enjoy!
