Ingredients:

2 slices of white bread
1/4 lb of deli roast beef, thinly sliced
2 tablespoons of olive oil
1/4 cup of diced onion
1/4 cup of diced bell pepper (any color)
2 cloves of garlic, minced
1 teaspoon of dried oregano leaves
1 teaspoon of dried basil leaves
Salt and pepper to taste

Cooking Instructions:

Heat the olive oil in a skillet over medium heat. Add the onion and bell pepper and cook until softened, about 5 minutes. Add the garlic and cook for an additional minute.
Add the roast beef to the skillet and season with oregano, basil, salt and pepper. Cook until heated through, about 3 minutes.
Toast the bread slices in a toaster or on a griddle until golden brown.
Place the roast beef mixture on one slice of toast and top with the other slice of toast to make a sandwich. Serve immediately.
