Ingredients:

30g bulgur wheat
1 tomato (diced)
½ cucumber (diced)
2 tablespoons fresh parsley (chopped)
2 tablespoons fresh mint (chopped)
2 tablespoons olive oil
1 tablespoon lemon juice
Salt and pepper to taste

Cooking Instructions:

Place the bulgur wheat in a bowl and cover with boiling water. Let it sit for 10 minutes until the bulgur wheat is tender. Drain any excess water.
Add the diced tomatoes and cucumbers to the bowl with the bulgur wheat.
In a separate bowl mix together the olive oil, lemon juice, salt and pepper to make the dressing. Pour over the salad ingredients in the bowl and mix everything together until combined.
Add in the chopped parsley and mint and mix everything together again until combined.
Serve chilled or at room temperature as desired! Enjoy!
