Ingredients:

1/2 cucumber, diced
1/2 tomato, diced
1/4 red onion, diced
2 tablespoons chopped parsley
2 tablespoons chopped mint leaves

Cooking Instructions:

In a small bowl whisk together the olive oil and lemon juice until combined. Pour over the vegetables in the medium bowl and toss to combine.
