Ingredients:

1 medium eggplant (about 300g)
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon dried oregano leaves
Salt and pepper to taste For the Tahini Sauce:
2 tablespoons tahini paste
2 tablespoons lemon juice
2 tablespoons water
1 clove garlic, minced
Salt and pepper to taste

Cooking Instructions:

Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
Cut the eggplant into ½ inch thick slices and place on the prepared baking sheet. Drizzle with olive oil and sprinkle with garlic, cumin, oregano leaves, salt and pepper. Toss to coat evenly.
Bake in preheated oven for 30-40 minutes until golden brown and tender.
Meanwhile prepare the tahini sauce by combining all ingredients in a small bowl and whisking until smooth.
Serve the roasted eggplant slices topped with tahini sauce. Enjoy!
