Indian Vegetable Pulao

This delicious Indian Vegetable Pulao is a one-pot meal that is packed with flavor and nutrition! Ingredients:

1 cup basmati rice
2 tablespoons vegetable oil
1 teaspoon cumin seeds
1 onion, finely chopped
2 cloves garlic, minced
1 teaspoon ginger paste or grated ginger root
1 teaspoon ground coriander powder
½ teaspoon ground turmeric powder
½ teaspoon garam masala powder
2 cups mixed vegetables (such as carrots, peas, bell peppers), chopped into small pieces
2 cups water or vegetable stock
Salt to taste

Cooking Instructions:

Wash the basmati rice until the water runs clear and set aside.
Heat the oil in a large pot over medium heat. Add the cumin seeds and let them sizzle for about 30 seconds. Add the onion and sauté until it starts to turn golden brown. Add the garlic and ginger paste and cook for another minute or two until fragrant.
Add the ground coriander powder, turmeric powder and garam masala powder and stir to combine everything together. Cook for another minute or two until fragrant.
Add the chopped vegetables and stir to combine everything together. Cook for about 5 minutes until the vegetables are slightly softened but still have some crunch to them.
Add the washed basmati rice and stir to combine everything together again. Pour in the water or vegetable stock and season with salt to taste. Bring everything up to a boil then reduce heat to low, cover with a lid and let it simmer for about 15 minutes or until all of the liquid has been absorbed by the rice and it’s cooked through but still has some bite to it (you may need to add more liquid if needed). Fluff with a fork before serving hot with your favorite accompaniments such as raita or chutney!
