Ingredients:

200g tofu, cubed
1 onion, chopped
2 cloves garlic, minced
1 teaspoon ginger paste
1 teaspoon cumin powder
1 teaspoon coriander powder
½ teaspoon turmeric powder
½ teaspoon garam masala powder
2 tablespoons vegetable oil
2 cups basmati rice, cooked
1 cup mixed vegetables (carrots, peas, beans), cooked
½ cup coconut milk
Salt and pepper to taste

Cooking Instructions:

Heat the oil in a large pan over medium heat. Add the onion and garlic and sauté for 3-4 minutes until softened.
Add the ginger paste, cumin powder, coriander powder, turmeric powder and garam masala powder and cook for another minute until fragrant.
Add the cubed tofu and cook for 5 minutes until lightly browned.
Add the cooked rice and vegetables to the pan and mix everything together until combined.
Pour in the coconut milk and season with salt and pepper to taste. Simmer for 10 minutes until heated through.
Serve hot with your favorite accompaniments such as raita or chutney!
