Indian Bhindi Masala

This Indian Bhindi Masala is an easy-to-make vegetarian curry that is packed full of flavor! It’s made with simple ingredients like cumin seeds, mustard seeds, onion, garlic, ginger paste or grated fresh ginger root, green chillies, tomatoes and okra (bhindi). Ingredients:

2 tablespoons vegetable oil
1 teaspoon cumin seeds
1 teaspoon mustard seeds
1 onion, finely chopped
2 cloves garlic, minced
1 teaspoon ginger paste or grated fresh ginger root
2 green chillies, finely chopped
2 tomatoes, finely chopped
250g okra (bhindi), sliced into rounds
1 teaspoon ground coriander
½ teaspoon ground turmeric
½ teaspoon garam masala
Salt to taste

Cooking Instructions:

Heat the oil in a large pan over medium heat. Add the cumin and mustard seeds and cook until they start to sizzle. Add the onion and cook until softened. Add the garlic and ginger paste or grated ginger root and cook for another minute.
Add the green chillies, tomatoes, okra (bhindi), ground coriander, turmeric and garam masala. Stir everything together until combined then reduce the heat to low-medium and cover with a lid. Cook for 15 minutes stirring occasionally until the okra is tender.
Remove from heat and season with salt to taste before serving hot with rice or naan breads.
