Ingredients:

2 potatoes, boiled and diced
1/2 cup chickpeas, boiled and drained
1/4 cup onions, finely chopped
1/4 cup tomatoes, finely chopped
2 tablespoons cilantro leaves, finely chopped
2 tablespoons tamarind chutney
2 tablespoons mint chutney
1 teaspoon chaat masala powder
1 teaspoon red chili powder
Salt to taste
1/4 cup papri (fried flour crisps) for garnish

Cooking Instructions:

In a large bowl combine the boiled potatoes and chickpeas. Add the onions, tomatoes and cilantro leaves. Mix well.
Add the tamarind chutney, mint chutney, chaat masala powder and red chili powder to the mixture. Mix everything together until all ingredients are evenly combined. Taste and adjust seasoning if needed.
Heat a non-stick pan over medium heat and add the potato mixture to it. Cook for about 5 minutes or until heated through.
Transfer the cooked aloo papri chat to a serving plate and garnish with papri crisps. Serve immediately!
