Ingredients:

2 tablespoons oil
1 teaspoon cumin seeds
1/2 teaspoon mustard seeds
1/2 teaspoon turmeric powder
1/2 teaspoon red chili powder
1/4 teaspoon garam masala powder
2 cloves garlic, minced
1 small onion, chopped
2 potatoes, diced
2 tablespoons fresh fenugreek leaves (methi)
Salt to taste

Cooking Instructions:

Heat the oil in a pan over medium heat. Add the cumin and mustard seeds and fry for a few seconds until they start to crackle.
Add the turmeric powder, red chili powder and garam masala powder and stir for a few seconds until fragrant.
Add the garlic and onion and fry for a few minutes until softened.
Add the potatoes and stir to combine with the spices. Cover with a lid and cook for 10 minutes or until the potatoes are cooked through.
Add the fenugreek leaves (methi) and salt to taste and stir to combine. Cook for another 5 minutes or until the methi is wilted.
Serve hot with chapatis or rice!
