Ingredients:

2 tablespoons vegetable oil
1 teaspoon cumin seeds
1 teaspoon mustard seeds
1 onion, finely chopped
2 cloves garlic, minced
1 teaspoon ground turmeric
1 teaspoon ground coriander
½ teaspoon ground cumin
½ teaspoon chili powder
2 potatoes, peeled and diced
½ cup frozen peas
Salt to taste

Cooking Instructions:

Heat the oil in a large saucepan over medium heat. Add the cumin and mustard seeds and cook until they start to sizzle.
Add the onion and garlic and cook until softened, about 5 minutes. Stir in the turmeric, coriander, cumin, and chili powder. Cook for another minute or two until fragrant.
Add the potatoes and stir to coat with the spices. Pour in enough water to just cover the potatoes. Bring to a boil then reduce heat to low and simmer for 15 minutes or until potatoes are tender.
Add the peas and simmer for another 5 minutes or until heated through. Season with salt to taste. Serve hot with rice or naan bread.
