Ingredients:

2 tablespoons vegetable oil
1 teaspoon cumin seeds
1 teaspoon mustard seeds
1 onion, chopped
2 cloves garlic, minced
1 teaspoon ground turmeric
1 teaspoon ground coriander
½ teaspoon ground cumin
½ teaspoon chili powder
2 potatoes, peeled and cubed
1 head cauliflower, cut into florets
Salt to taste

Cooking Instructions:

Heat the oil in a large skillet over medium heat. Add the cumin and mustard seeds and cook until they start to sizzle.
Add the onion and garlic and cook until softened, about 5 minutes.
Add the turmeric, coriander, cumin and chili powder and stir to combine.
Add the potatoes and cauliflower and stir to coat with the spices. Cook for about 10 minutes or until the vegetables are tender.
Season with salt to taste and serve hot with rice or naan bread.
