Ingredients:

2 tablespoons vegetable oil
1 teaspoon cumin seeds
1 teaspoon mustard seeds
1 onion, finely chopped
2 cloves garlic, minced
1 teaspoon ground ginger
1 teaspoon ground coriander
½ teaspoon turmeric powder
2 potatoes, peeled and cubed
½ cup water
Salt to taste

Cooking Instructions:

Heat the oil in a large saucepan over medium heat. Add the cumin and mustard seeds and cook until they start to sizzle.
Add the onion and garlic and cook until softened, about 5 minutes. Stir in the ginger, coriander, and turmeric powder and cook for another minute.
Add the potatoes to the pan and stir to coat with the spices. Pour in the water and bring to a boil. Reduce heat to low and simmer for 15 minutes or until potatoes are tender.
Season with salt to taste before serving hot with rice or naan bread.
