1 tablespoon olive oil
1/2 cup diced onion
1/2 cup diced bell pepper (any color)
1/2 cup diced zucchini or squash
2 cloves garlic, minced
1 teaspoon dried oregano leaves
1 teaspoon dried basil leaves
Salt and pepper to taste
