Ingredients:

2 tablespoons salsa
1/4 avocado, diced
1 tablespoon fresh herbs (e.g. parsley or cilantro), chopped
1/2 cup cooked vegetables (e.g. bell peppers or onions), diced
2 slices of ham
2 slices of cheese
1 whole wheat tortilla wrap

Cooking Instructions:

Heat a skillet over medium heat. Add the salsa and vegetables to the skillet and cook for 3-4 minutes until the vegetables are tender. Remove from heat and set aside.
Place the tortilla wrap on a plate or cutting board. Layer the ham slices on top of the wrap followed by the cheese slices. Top with the cooked vegetables and salsa mixture as well as the diced avocado and chopped herbs.
Carefully fold up the sides of the wrap to enclose all of the ingredients inside then place it in a preheated skillet over medium heat for 2-3 minutes until lightly browned on both sides. Serve warm.
