Ingredients:

2 tablespoons olive oil
1/2 cup diced ham
1/4 cup shredded cheese of your choice
1/4 cup salsa of your choice
1/4 avocado, diced
2 tablespoons chopped fresh herbs (such as cilantro or parsley)
2 small flour tortillas

Cooking Instructions:

Heat the olive oil in a large skillet over medium heat. Add the diced ham and cook until lightly browned.
Add the shredded cheese to the skillet and stir until melted.
Add the salsa to the skillet and stir until combined.
Add the diced avocado to the skillet and stir until combined.
Remove from heat and add the chopped herbs to the mixture. Stir until combined.
Place one tortilla on a plate or cutting board and spoon half of the mixture onto it in an even layer. Top with another tortilla to form a burrito wrap. Repeat with remaining ingredients for second burrito wrap.
Heat a large skillet over medium heat and place both burritos in it seam side down for about 3 minutes or until lightly browned on each side. Serve warm with additional salsa or guacamole if desired!
