Ingredients:

2 slices of whole wheat bread
2 tablespoons of olive oil
½ cup of diced bell peppers (red, yellow or green)
½ cup of diced mushrooms
½ cup of diced onions
¼ cup of crumbled tofu
Salt and pepper to taste

Cooking Instructions:

Heat a non-stick skillet over medium heat. Add the olive oil and heat until it starts to shimmer.
Add the bell peppers, mushrooms and onions to the skillet and cook for about 5 minutes or until they are softened.
Add the crumbled tofu to the skillet and season with salt and pepper to taste. Cook for an additional 3-4 minutes or until the tofu is lightly browned.
Toast the bread slices in a toaster or on a griddle pan until lightly golden brown.
Assemble the sandwich by layering the grilled veggies and tofu onto one slice of toast, top with the other slice of toast and enjoy!
