Ingredients:

100g cooked shrimp
1/2 red onion, finely chopped
1/2 red pepper, finely chopped
2 tablespoons olive oil
Juice of 1 lemon
2 tablespoons fresh parsley, chopped
Salt and pepper to taste

Cooking Instructions:

Preheat the grill to medium-high heat.
Place the shrimp on a greased baking sheet and brush with olive oil. Grill for 5 minutes on each side until cooked through. Set aside to cool.
In a large bowl combine the red onion, red pepper, olive oil, lemon juice and parsley. Season with salt and pepper to taste. Mix well to combine.
Add the cooled shrimp to the bowl and mix gently until all ingredients are combined. Serve immediately or chill in the refrigerator for up to 2 hours before serving.
