Ingredients:

2 large shrimp (peeled and deveined)
1/2 zucchini (sliced into 1/4 inch thick rounds)
1/4 red onion (sliced into thin strips)
2 tablespoons olive oil
Salt and pepper to taste For the Lemon Basil Dressing:
2 tablespoons olive oil
2 tablespoons freshly squeezed lemon juice
1 tablespoon chopped fresh basil leaves

Cooking Instructions:

Preheat oven to 375°F. Line a baking sheet with parchment paper.
Place the zucchini slices on the baking sheet in an even layer. Drizzle with 1 tablespoon of olive oil and season with salt and pepper to taste. Bake for 15 minutes or until golden brown.
Heat a grill pan over medium heat. Drizzle the shrimp with remaining tablespoon of olive oil and season with salt and pepper to taste. Grill for 3 minutes per side or until cooked through.
In a small bowl, whisk together the olive oil, lemon juice, basil leaves, salt, and pepper to make the dressing. Set aside.
In a large bowl combine the roasted zucchini slices, grilled shrimp, red onion strips, and dressing together until evenly combined. Serve immediately or chill in refrigerator for up to 4 hours before serving cold.
