Ingredients:

250g shrimp, peeled and deveined
1 red onion, cut into wedges
1 bell pepper, cut into strips
2 tablespoons olive oil
Salt and pepper to taste For the Chimichurri Dressing:
2 cloves garlic, minced
2 tablespoons fresh parsley, chopped
2 tablespoons fresh oregano leaves, chopped
2 tablespoons red wine vinegar
4 tablespoons olive oil

Cooking Instructions:

Preheat oven to 200°C. Place the red onion wedges and bell pepper strips on a baking sheet lined with parchment paper. Drizzle with olive oil and season with salt and pepper. Roast in preheated oven for 10 minutes. Remove from oven and set aside.
Heat a grill pan over medium heat. Add the shrimp to the pan in a single layer. Cook for 3 minutes per side or until cooked through. Remove from heat and set aside.
To make the chimichurri dressing, combine garlic, parsley, oregano leaves, red wine vinegar, olive oil in a small bowl or jar. Whisk or shake until combined.
To assemble the salad place roasted vegetables on a plate or bowl then top with grilled shrimp. Drizzle with chimichurri dressing before serving. Enjoy!
