Ingredients:

200g peeled and deveined shrimp
1/2 cup grape tomatoes
1/2 cup diced zucchini
2 tablespoons olive oil
2 tablespoons freshly squeezed lemon juice
1 teaspoon minced garlic
1 teaspoon dried basil leaves
Salt and pepper to taste

Cooking Instructions:

Preheat oven to 375°F (190°C).
Place the grape tomatoes and zucchini on a baking sheet lined with parchment paper. Drizzle with 1 tablespoon of olive oil and season with salt and pepper. Roast in the preheated oven for 15 minutes or until vegetables are tender.
Meanwhile, heat the remaining tablespoon of olive oil in a large skillet over medium heat. Add the shrimp and cook for 3 minutes per side or until cooked through. Remove from heat and set aside.
In a small bowl, whisk together the lemon juice, garlic, basil leaves, salt and pepper to make the dressing.
In a large bowl combine the roasted vegetables with the cooked shrimp. Pour over the dressing and toss to combine. Serve immediately or chill in refrigerator for later use.
