Ingredients:

200g shrimp (peeled and deveined)
1 large eggplant (cut into cubes)
2 bell peppers (cut into cubes)
2 tablespoons olive oil
1 teaspoon garlic powder
Salt and pepper to taste For the Lemon Basil Dressing:
2 tablespoons olive oil
2 tablespoons lemon juice
1 tablespoon chopped fresh basil leaves
Salt and pepper to taste

Cooking Instructions:

Preheat oven to 400°F. Line a baking sheet with parchment paper.
Place the cubed eggplant and bell peppers on the baking sheet. Drizzle with olive oil and season with garlic powder, salt, and pepper. Toss to combine. Roast in preheated oven for 15-20 minutes or until vegetables are tender. Remove from oven and set aside.
Heat a grill pan over medium-high heat. Add the shrimp to the pan in a single layer and cook for 3-4 minutes per side or until cooked through. Remove from heat and set aside.
To make the dressing, whisk together olive oil, lemon juice, basil leaves, salt, and pepper in a small bowl until combined. Set aside.
In a large bowl combine roasted vegetables with cooked shrimp then pour over dressing and toss to combine everything together until evenly coated in dressing. Serve immediately or chill in refrigerator for later use!
