Ingredients:

200g shrimp
1 head of broccoli, cut into florets
1 bunch of asparagus, cut into 2 inch pieces
2 tablespoons olive oil
2 cloves garlic, minced
2 tablespoons lemon juice
1 teaspoon honey
Salt and pepper to taste

Cooking Instructions:

Preheat oven to 400°F.
Place broccoli and asparagus on a baking sheet and drizzle with 1 tablespoon of olive oil.
Roast for 15 minutes, stirring halfway through.
Heat a grill pan over medium-high heat and add remaining olive oil.
Add shrimp and cook for 3-4 minutes per side, or until cooked through.
In a small bowl, whisk together garlic, lemon juice, honey, salt, and pepper.
In a large bowl, combine roasted vegetables and shrimp.
Drizzle with dressing and toss to combine.
