Ingredients:

200g shrimp, peeled and deveined
1 bell pepper, cut into strips
1 onion, cut into strips
2 tablespoons olive oil
2 tablespoons Dijon mustard
1 tablespoon white wine vinegar
1 teaspoon honey
Salt and pepper to taste

Cooking Instructions:

Preheat the oven to 200°C.
Place the bell pepper and onion strips on a baking sheet and drizzle with 1 tablespoon of olive oil.
Roast in the oven for 10 minutes.
Meanwhile, heat the remaining 1 tablespoon of olive oil in a skillet over medium-high heat.
Add the shrimp and cook for 3-4 minutes, or until cooked through.
In a small bowl, whisk together the Dijon mustard, white wine vinegar, and honey.
Season with salt and pepper to taste.
To assemble the salad, combine the roasted bell pepper and onion strips with the cooked shrimp in a bowl.
