Ingredients:

200g shrimp, peeled and deveined
1 bell pepper, cut into strips
2 cloves garlic, minced
2 tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1 bunch asparagus spears, trimmed and cut into 2
inch pieces
2 tablespoons freshly squeezed lemon juice
2 tablespoons chopped fresh parsley leaves
2 tablespoons grated Parmesan cheese
2 tablespoons toasted pine nuts (optional)

Cooking Instructions:

Preheat the grill to medium-high heat. Place the shrimp on a greased grill rack. Grill for 3 minutes per side or until cooked through. Remove from the grill and set aside.
Heat the olive oil in a large skillet over medium heat. Add the bell pepper strips and garlic and cook for 5 minutes or until softened. Season with salt and pepper to taste. Add the asparagus spears to the skillet and cook for an additional 5 minutes or until tender-crisp. Remove from heat and set aside.
In a small bowl, whisk together the lemon juice, parsley leaves, Parmesan cheese, and toasted pine nuts (if using). Drizzle over the grilled shrimp and roasted vegetables in the skillet. Toss gently to combine all ingredients together evenly. Serve warm or at room temperature as a salad or side dish. Enjoy!
