Ingredients:

100g shrimp, peeled and deveined
1 artichoke heart, roasted and chopped into small pieces
2 tablespoons olive oil
1 tablespoon lemon juice
1 teaspoon minced garlic
2 tablespoons chopped fresh basil leaves
Salt and pepper to taste

Cooking Instructions:

Preheat a grill or grill pan to medium heat.
Toss the shrimp in 1 tablespoon of olive oil and season with salt and pepper.
Grill the shrimp for 3 minutes per side or until cooked through. Set aside to cool slightly before chopping into small pieces.
In a small bowl, whisk together the remaining olive oil, lemon juice, garlic, basil leaves, salt and pepper until combined.
In a large bowl combine the grilled shrimp pieces, roasted artichoke hearts and dressing until evenly coated.
Serve chilled or at room temperature as desired. Enjoy!
