Ingredients:

4 large shrimp, peeled and deveined
2 slices of whole wheat bread
2 tablespoons of olive oil
1 tablespoon of lemon juice
1/4 teaspoon of garlic powder
Salt and pepper to taste
2 tablespoons of crumbled feta cheese

Cooking Instructions:

Preheat a grill or grill pan over medium-high heat.
In a small bowl, combine the olive oil, lemon juice, garlic powder, salt and pepper. Mix until combined.
Place the shrimp in the bowl with the marinade and toss to coat evenly.
Grill the shrimp for about 3 minutes per side or until cooked through.
Toast the bread slices on the grill for about 1 minute per side or until lightly golden brown.
Place the grilled shrimp on one slice of toast and top with feta cheese crumbles. Top with remaining slice of toast to make a sandwich.
