Ingredients:

1 salmon fillet (150g)
2 tablespoons olive oil
1 teaspoon garlic powder
½ teaspoon salt
½ teaspoon black pepper
1 red bell pepper (150g), cut into cubes
1 yellow bell pepper (150g), cut into cubes
1 zucchini (150g), cut into cubes
2 tablespoons lemon juice
2 tablespoons olive oil

Cooking Instructions:

Preheat the oven to 375°F. Line a baking sheet with parchment paper.
Place the salmon fillet on the baking sheet and season with garlic powder, salt, and black pepper. Drizzle with 2 tablespoons of olive oil. Bake for 20 minutes or until cooked through.
In a separate bowl, combine the red bell pepper, yellow bell pepper, and zucchini cubes. Drizzle with 2 tablespoons of olive oil and season with salt and black pepper to taste. Spread the vegetables onto the baking sheet next to the salmon fillet and bake for 20 minutes or until vegetables are tender.
In a small bowl, whisk together lemon juice and 2 tablespoons of olive oil to make the vinaigrette dressing.
To assemble the salad, place the roasted vegetables in a bowl or plate and top with grilled salmon fillet slices. Drizzle with lemon vinaigrette dressing before serving. Enjoy!
