Ingredients:

2 large portobello mushrooms
2 tablespoons olive oil
2 tablespoons balsamic vinegar
2 tablespoons minced garlic
2 tablespoons minced fresh parsley
Salt and pepper to taste
2 slices of whole wheat bread
2 ounces of goat cheese
2 tablespoons of butter

Cooking Instructions:

Preheat the grill to medium-high heat.
In a small bowl, mix together the olive oil, balsamic vinegar, garlic, parsley, salt, and pepper.
Brush the mushrooms with the mixture and place them on the grill.
Grill the mushrooms for 5 minutes on each side.
Toast the bread slices in a toaster or on the grill.
Spread the goat cheese on the toasted bread slices.
Place the grilled mushrooms on top of the goat cheese.
Spread the butter on the outside of the sandwich.
Grill the sandwich for 2 minutes on each side.
