Ingredients:

2 portobello mushrooms, sliced into 1/4 inch thick slices
1 red bell pepper, roasted and cut into strips
2 tablespoons olive oil
2 tablespoons balsamic vinegar
1 teaspoon garlic powder
Salt and pepper to taste
2 slices of your favorite bread or roll

Cooking Instructions:

Preheat the grill to medium-high heat.
In a bowl, combine the olive oil, balsamic vinegar, garlic powder, salt and pepper. Mix until combined.
Place the portobello mushroom slices in the bowl with the marinade and toss to coat evenly. Let sit for 5 minutes.
Place the mushrooms on the preheated grill and cook for 5 minutes per side or until tender and lightly charred.
Toast your favorite bread or roll in a toaster oven or on the grill for a few minutes until lightly browned.
Assemble your sandwich by layering the grilled portobello mushrooms with roasted red pepper strips on top of one slice of toast or roll and topping with another slice of toast or roll. Serve immediately while hot!
