Ingredients:

2 portobello mushrooms, sliced into 1/2 inch thick slices
2 tablespoons olive oil
Salt and pepper to taste
2 slices of whole wheat bread
2 tablespoons hummus
1/4 cup arugula leaves or baby spinach leaves
1/4 cup sliced red onion

Cooking Instructions:

Preheat a grill or grill pan over medium-high heat.
Brush the portobello mushroom slices with olive oil and season with salt and pepper.
Grill the mushrooms for 5 minutes per side until they are tender and lightly charred.
Toast the bread slices in a toaster or on the grill until lightly golden brown.
Spread one tablespoon of hummus on each slice of toast.
Top each slice of toast with half of the grilled mushrooms, arugula or spinach leaves, and red onion slices.
Place the other slice of toast on top to make a sandwich and serve immediately.
