Ingredients:

2 slices of whole wheat bread
2 tablespoons of pesto sauce
1 grilled chicken breast, sliced
1 roasted red pepper, sliced
2 tablespoons of olive oil
Salt and pepper to taste

Cooking Instructions:

Heat a skillet over medium heat. Add the olive oil to the skillet.
Spread the pesto sauce on one side of each slice of bread. Place the slices in the skillet with the pesto side down. Toast for about 3 minutes or until golden brown.
Remove the bread from the skillet and set aside. Add the sliced chicken breast to the skillet and cook for about 5 minutes or until cooked through. Season with salt and pepper to taste.
To assemble the sandwich, place one slice of bread on a plate with the pesto side up. Top with roasted red peppers, grilled chicken breast slices, and remaining slice of bread with pesto side down.
