Ingredients:

2 tablespoons of olive oil
1 boneless skinless chicken breast
1/2 teaspoon of garlic powder
1/2 teaspoon of salt
1/4 teaspoon of black pepper
1 ciabatta roll, split in half lengthwise
2 tablespoons of pesto sauce
1 roasted red pepper, sliced into strips

Cooking Instructions:

Preheat a grill or grill pan to medium-high heat.
Brush the chicken breast with olive oil and season with garlic powder, salt and pepper.
Grill the chicken for 5-7 minutes per side or until cooked through. Remove from heat and let rest for 5 minutes before slicing into strips.
Toast the ciabatta roll on the grill for 2-3 minutes per side or until lightly toasted.
Spread the pesto sauce on both sides of the ciabatta roll. Top one side with the grilled chicken strips and roasted red pepper slices. Place the other half of the roll on top to make a sandwich.
Serve immediately and enjoy!
