Ingredients:

2 boneless, skinless chicken breasts
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
2 cups Brussels sprouts, halved
2 tablespoons olive oil
1/2 teaspoon salt

1 apple, cored and diced
1/2 cup pecans, chopped
2 tablespoons olive oil
2 tablespoons apple cider vinegar
1 tablespoon Dijon mustard
1 teaspoon honey
1/4 teaspoon salt
1/4 teaspoon black pepper

Cooking Instructions:

Preheat oven to 400°F.
Place chicken breasts on a baking sheet and drizzle with 2 tablespoons of olive oil. Sprinkle with garlic powder, onion powder, paprika, salt, and pepper.
Place Brussels sprouts on a separate baking sheet and drizzle with 2 tablespoons of olive oil. Sprinkle with salt and pepper.
Place both baking sheets in the oven and bake for 25 minutes, or until chicken is cooked through and Brussels sprouts are tender.
Meanwhile, in a large bowl, combine diced apple, chopped pecans, olive oil, apple cider vinegar, Dijon mustard, honey, salt, and pepper.
Once chicken and Brussels sprouts are cooked, assemble the salad by adding the roasted Brussels sprouts to the bowl with the apple and pecan mixture.
