Ingredients:

2 tablespoons olive oil
1 boneless skinless chicken breast
Salt and pepper to taste
1 bell pepper, sliced into strips
1 ciabatta roll, split in half lengthwise
2 tablespoons goat cheese

Cooking Instructions:

Heat the olive oil in a large skillet over medium-high heat. Season the chicken breast with salt and pepper to taste. Place the chicken in the skillet and cook for 5 minutes per side or until cooked through. Remove from heat and set aside.
Add the bell pepper strips to the same skillet and cook for 3-4 minutes or until softened. Remove from heat and set aside.
Toast the ciabatta roll in a separate skillet over medium heat for 1-2 minutes per side or until lightly golden brown.
To assemble the sandwich, spread goat cheese on one side of each half of the ciabatta roll. Top with grilled chicken breast slices and roasted bell pepper strips. Serve immediately.
