Ingredients:

1 boneless skinless chicken breast
1 tablespoon olive oil
Salt and pepper to taste
½ small onion, thinly sliced
2 tablespoons butter
2 tablespoons brown sugar
1 croissant, split in half lengthwise
2 slices brie cheese

Cooking Instructions:

Preheat the grill to medium-high heat.
Rub the chicken breast with olive oil and season with salt and pepper. Grill for about 8 minutes per side or until cooked through. Set aside to cool slightly before slicing into thin strips.
In a medium skillet over medium heat, melt the butter and add the onions. Cook for about 5 minutes or until softened and beginning to caramelize. Add the brown sugar and cook for an additional 3-4 minutes or until golden brown and caramelized. Remove from heat and set aside.
Toast the croissant halves on the grill for about 2 minutes per side or until lightly golden brown and crisp.
To assemble the sandwich, layer one half of the croissant with brie cheese slices followed by grilled chicken strips and caramelized onions. Top with remaining half of croissant and enjoy!
