Ingredients:

2 tablespoons olive oil
1 small onion, thinly sliced
1 boneless skinless chicken breast
Salt and pepper to taste
2 tablespoons butter
2 slices blue cheese
1 ciabatta roll, split in half lengthwise

Cooking Instructions:

Heat the olive oil in a large skillet over medium heat. Add the onion and cook until softened and lightly browned, about 5 minutes. Remove from the heat and set aside.
Season the chicken breast with salt and pepper. Heat a separate skillet over medium-high heat and add the butter. Once melted, add the chicken breast to the pan and cook for 4-5 minutes per side or until cooked through.
Place the ciabatta roll halves on a baking sheet or in a toaster oven and toast lightly. Once toasted, spread each half with butter if desired.
Place the cooked chicken breast on one half of the ciabatta roll followed by the caramelized onions and blue cheese slices. Top with remaining half of ciabatta roll to form a sandwich. Serve immediately.
