Ingredients:

200g chicken breast
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon paprika powder
2 tablespoons lemon juice
2 tablespoons honey
1 tablespoon Dijon mustard
2 cups mixed salad leaves

Cooking Instructions:

Preheat the grill to medium-high heat.
Rub the chicken breast with olive oil and season with garlic powder and paprika powder.
Place the chicken on the preheated grill and cook for 8-10 minutes until cooked through.
Meanwhile, in a small bowl whisk together the lemon juice, honey and Dijon mustard to make the dressing. Set aside.
Once the chicken is cooked through, remove from the grill and let it rest for 5 minutes before slicing into strips or cubes.
In a large bowl combine the mixed salad leaves with the sliced chicken strips or cubes and pour over the prepared dressing. Toss everything together until evenly coated in dressing then serve immediately.
