Ingredients:

1 ciabatta roll
1 chicken breast
1/2 zucchini, sliced
1/4 cup olive oil
1/4 teaspoon garlic powder
1/4 teaspoon Italian seasoning
Salt and pepper, to taste
1/4 cup shredded provolone cheese

Cooking Instructions:

Preheat oven to 400°F.
Place the sliced zucchini on a baking sheet and drizzle with olive oil. Sprinkle with garlic powder, Italian seasoning, salt and pepper. Roast in the oven for 10 minutes.
Heat a grill pan over medium-high heat. Season the chicken breast with salt and pepper and grill for 5-7 minutes per side, or until cooked through.
Slice the ciabatta roll in half and spread the provolone cheese on the bottom half.
Place the grilled chicken on top of the cheese and top with the roasted zucchini.
Place the top half of the ciabatta roll on top and press down lightly.
Cut the sandwich in half and serve.
