This Grilled Chicken, Roasted Tomato and Mozzarella Ciabatta Sandwich is an easy-to-make Italian-inspired meal that can be enjoyed warm or at room temperature! It’s made with grilled chicken breasts brushed with balsamic vinegar, roasted tomatoes and melted mozzarella cheese all served on a ciabatta roll for an amazing flavor combination!

Ingredients:

1 ciabatta roll
2 tablespoons olive oil
2 boneless skinless chicken breasts
Salt and pepper to taste
2 tablespoons balsamic vinegar
1 large tomato, sliced into rounds
1/4 cup shredded mozzarella cheese

Cooking Instructions:

Preheat the oven to 375°F (190°C).
Heat the olive oil in a large skillet over medium-high heat. Season the chicken breasts with salt and pepper and add them to the skillet. Cook for about 5 minutes per side or until cooked through.
Transfer the chicken to a baking sheet lined with parchment paper and brush each breast with balsamic vinegar. Bake in preheated oven for 10 minutes or until cooked through.
Meanwhile, place the tomato slices on a baking sheet lined with parchment paper and sprinkle with salt and pepper to taste. Bake in preheated oven for 10 minutes or until lightly browned around the edges.
To assemble the sandwich, slice the ciabatta roll in half lengthwise and spread each half with some of the remaining balsamic vinegar if desired. Place one of the cooked chicken breasts on one half of the roll followed by some of the roasted tomatoes and mozzarella cheese. Top with remaining half of roll and serve warm or at room temperature.
