Ingredients:

120g chicken breast
1 red pepper, roasted and sliced into strips
100g asparagus spears, trimmed and blanched
2 tablespoons olive oil
Juice of 1 lemon
2 tablespoons chopped fresh basil leaves
Salt and pepper to taste

Cooking Instructions:

Preheat the grill to medium-high heat.
Rub the chicken breast with olive oil and season with salt and pepper. Grill for 8-10 minutes until cooked through. Set aside to cool slightly before slicing into strips.
In a large bowl combine the roasted red pepper strips, blanched asparagus spears and grilled chicken strips.
In a small bowl whisk together the olive oil, lemon juice, chopped basil leaves and salt & pepper to taste. Pour over the salad ingredients in the large bowl and toss to combine.
Serve immediately or chill in the refrigerator for up to 2 hours before serving.
