This Grilled Chicken, Roasted Mushroom and Provolone Ciabatta Sandwich is an easy to make Italian dish that’s perfect for lunch or dinner! It’s made with grilled chicken breasts, roasted mushrooms seasoned with garlic powder, salt and pepper all sandwiched between two slices of provolone cheese on a ciabatta roll that’s been lightly pressed together before being cooked in a skillet until golden brown and crispy on both sides!

Ingredients:

2 tablespoons olive oil
1/2 cup sliced mushrooms
1/4 teaspoon garlic powder
Salt and pepper to taste
2 boneless skinless chicken breasts, pounded thin
2 slices provolone cheese
1 ciabatta roll, split in half lengthwise

Cooking Instructions:

Preheat the oven to 375°F (190°C).
In a small bowl, combine the olive oil, mushrooms, garlic powder, salt and pepper. Mix until everything is evenly coated.
Spread the mushroom mixture onto a baking sheet lined with parchment paper. Bake for 10 minutes or until the mushrooms are golden brown.
Heat a large skillet over medium-high heat and add the chicken breasts. Cook for 4-5 minutes per side or until cooked through.
Place the cooked chicken on one half of the ciabatta roll and top with the roasted mushrooms and provolone cheese slices. Place the other half of the roll on top and press down lightly to secure it in place.
Place the sandwich in a preheated skillet over medium heat and cook for 3-4 minutes per side or until golden brown and crispy on both sides.
