Ingredients:

1 chicken breast (150g)
1 red onion (100g)
2 cloves of garlic (10g)
2 tablespoons of olive oil (30ml)
1 teaspoon of lemon juice (5ml)
Salt and pepper to taste
200g asparagus spears

Cooking Instructions:

Preheat the oven to 200°C/400°F.
Cut the red onion into wedges and place on a baking tray. Drizzle with 1 tablespoon of olive oil and season with salt and pepper. Roast in the oven for 15 minutes until golden brown.
Meanwhile, heat a griddle pan over medium-high heat. Rub the chicken breast with the remaining olive oil, salt, and pepper. Grill for 8-10 minutes until cooked through. Set aside to rest for 5 minutes before slicing into strips.
In a small bowl, mix together the garlic, lemon juice, salt, pepper, and remaining olive oil to make the dressing.
Blanch the asparagus spears in boiling water for 2-3 minutes until tender but still crisp then drain well and set aside to cool slightly before adding to a large bowl along with the roasted red onion wedges and grilled chicken strips. Drizzle over the dressing and toss everything together until evenly coated in the dressing then serve immediately or chill in the fridge until ready to eat!
