Ingredients:

2 boneless skinless chicken breasts
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon dried oregano
Salt and pepper to taste
2 cups green beans, trimmed and halved lengthwise
1 cup mushrooms, sliced
2 tablespoons lemon juice
2 tablespoons olive oil

Cooking Instructions:

Preheat the oven to 375°F. Line a baking sheet with parchment paper.
Place the chicken breasts on the baking sheet and brush them with olive oil. Sprinkle garlic powder, oregano, salt and pepper over the chicken breasts. Bake for 25-30 minutes or until cooked through.
Meanwhile, place the green beans and mushrooms on a separate baking sheet lined with parchment paper. Drizzle with olive oil and season with salt and pepper to taste. Roast for 15-20 minutes or until tender-crisp.
In a small bowl whisk together lemon juice and olive oil to make the vinaigrette dressing.
To assemble the salad, place the roasted vegetables on a plate or bowl then top with grilled chicken breast slices. Drizzle with lemon vinaigrette dressing before serving. Enjoy!
