Ingredients:

2 boneless skinless chicken breasts (200g)
1 large eggplant (400g), cut into cubes
1 red onion (150g), cut into wedges
2 tablespoons olive oil (30ml)
Salt and pepper to taste For the Dijon Vinaigrette:
2 tablespoons olive oil (30ml)
2 tablespoons white wine vinegar (30ml)
1 teaspoon Dijon mustard (5ml)
1 teaspoon honey (5ml)

Cooking Instructions:

Preheat oven to 400°F/200°C. Place the eggplant cubes on a baking sheet lined with parchment paper. Drizzle with olive oil and season with salt and pepper. Roast for 20 minutes or until golden brown. Set aside to cool.
Heat a grill pan over medium-high heat. Rub the chicken breasts with olive oil and season with salt and pepper. Grill for 8-10 minutes or until cooked through. Set aside to cool before slicing into strips.
In a large bowl, combine the roasted eggplant cubes, red onion wedges, grilled chicken strips, and vinaigrette ingredients together until evenly coated in dressing. Serve immediately or chill in the refrigerator for up to 3 days before serving.
